One of my favorite snacks is Edamame. While the scientists and food-ologists argue about the health benefits/dangers of eating soy, and the environmentalists and biodiviersity buffs protest GM soy, I’m going to sit on my couch and enjoy this delectable treat. I sympathize with the latter, but sometimes, I can’t help but consume this perfect snack.
I like to buy the beans in shell, boil to cook (or re-heat if they are already cooked & frozen), and toss with salt. Last night, I brought them up a level by tossing with toasted sesame oil, sesame seeds, and salt. It really hit the spot.
