• Simple Christmas Morning Breakfast

    I’ve been requesting this breakfast on Christmas morning for the past few years and will continue to request this meal for many years to come.  Here’s the line-up: Potato pancake with a poached egg on top, served with a side of dressed greens and a mimosa.

    My dad makes potato pancakes very simply: grates the potatoes, squeezes out the excess water and spreads over a heated nonstick pan with butter and olive oil.  Once crispy, the pancake is flipped once and seasoned with salt and pepper, served with a poached egg on top.  Once you poke into the yolk, it oozes all over the pancake and serves as the perfect condiment- get that bottle of ketchup away from this masterpiece!  The perfect accompaniment for this meal is a side of dressed greens and a champagne mimosa.

Her home is cozy and warm, and her hospitality is outmatched by no one. On the bookshelves you will find recipes given to her by friends, and books like Omnivore's Dilemma and Salt: A World History, the later being one of the best book suggestion I've ever received, and the subject of her college thesis. Never missing the chance to make a dinner party a dance party, Holly is in constant motion, ready to motivate the group with classy tunes like Credence, Al Green, and GirlTalk. Unless, of course, Top Chef is on.

      Speaking of champagne, has anybody else noticed what a bargain some of the Spanish Cavas are in comparison to Champagnes and Sparkling Wines?

      I’ll have to check out the Spanish Cavas next time I’m in the mood for some bubbly. Another type of sparkling wine I enjoy and is also a good bargain is Portuguese Vinho Verde.
